Not Your Ordinary Chili
It has been so incredibly snowy and cold here in the midwest, it just makes me to make comfort food! Everyday. The weather is not helping the waistline! This week we have another few days of 20 degrees below zero with the windchill. When will the kids every go back to school or stop having delay days!?!?
One of our favorite comfort food meals is Chili….and I have to say, that I don’t make the “normal” kind of chili!
There are a number of recipes that my husband brought to our marriage and this is one of them. {Might I add, that doesn’t mean he actually MAKES the recipes, it just means they were his favorite things he ate growing up! }It’s a recipe from his sister and I have never run into anyone else who has a similar recipe. Every time we make it when company is over they rant and rave at how yummy it is!
There are a few things I absolutely LOVE about this Chili Recipe;
- it’s easy and fast!
- it’s not too chunky with tomatoes
- the rice is unexpected and so yummy!
If you want to try something thing just a bit different, and definitely not ordinary, give this Chili Recipe a try! I’m sure you’ll LOVE it!
- 1 lb. cooked hamburger
- 1 c. chopped onion
- 1 c. chopped green pepper
- 2 cans Campbell’s tomato rice soup
- 1 can chili beans
- 2T. chili powder
- 1 T. vinegar
- shredded cheddar cheese
- Brown meat, onions, green pepper; drain.
- Stir in rest of ingredients; simmer approx. 30 minutes.
- Sprinkle cheese after chili is in bowls.

We had a cold stretch over Christmas here that was in the -40’s with wind chill. Schools are still open at -32 here, so, when it was time to go back to school and the temps were still freezing, we braved the cold. Otherwise, we stayed inside as long as possible!
I’m not sure we have the tomato soup with rice available here. Do you think I could use regular tomato soup and add the rice extra?
I have used regular tomato soup and rice and while it was still good, my family knew right away something was different! LOL. I think it tastes so much better with the actual tomato rice soup!
I’m not sure where you live, but have you tried Amazon or Wal-Mart’s website? I often find more obscure grocery items that way.
